MANY TIMES WHEN WE SAT DOWN to eat on those cold winter nights my mother would pull a nice hot pan of Corn Bread from the oven and place it on the table.

We would place a piece of it in a cereal bowl, pour milk over it and sprinkle on a little sugar before devouring it.

Other times we would slice a piece open and then spread some of that home made butter over the two halves and let it melt in before we consumed them along with a glass of milk. Many a time my entire meal has consisted of Corn Bread and milk (by choice - not necessity).

Another favorite my mother used to make she called "Fried Bread".

She would cut strips of bread dough and place them in a greased skillet and fry them until they were brown on each side. We then placed these strips in our plate and covered them with syrup (like pancakes) before eating them.

While living in Oregon fifty years later we found a restaurant in Tigard offering this dish as a “specialty” on their menu except they called it "Indian Bread".
